Auntie Cheddar's Grilled Zuchini Quiche |

Puffed
and pretty, this souffle is great for breakfast, lunch or dinner.

For Two Cheesekins
3
eggs, separated
1/2 c. soft cheese, such as ricotta
2 ounces or 1/4 cup goat cheese, or herb cream cheese
1/2 c. half and half
1/3 c. unbleached all-purpose flour
1/2 tsp. salt
Pinch black pepper
3 green onions, chopped
1 Tbsp. butter 1 fresh sardine for garnish (optional!)

Preheat oven to 400°.
Whisk yolks and cheese together in medium bowl. Whisk in half and half and
gradually add flour, salt and pepper until blended.

Beat egg whites until stiff. With a wide rubber spatula, fold half of the
egg whites into the cheese mixture. When blended, fold in the other half.

Melt butter in a sturdy 9-inch ovenproof-skillet and coat evenly. Scoop soufflé
mixture into pan and bake until puffy and golden, about 20 minutes. For a
truly memorable dish, garnish with a sardine and serve immediately!
