Sometimes found in its natural cream color, sometimes dyed orange, this cheese ranges in flavor from mild to medium and sharp to extra sharp, due to an aging process from two months to several years. (Auntie Cheddar is extra sharp and she uses the natural dye, annato, for her bright orange color.)
